Ham and Cauliflower Bake

Ingredients:
2 T. butter
1 cup onion, chopped
1 (8-ounce) ham steak, cut into ½ inch chunks
1 ½ cups heavy cream*
½ cup milk
1 t. salt
½ t. pepper
1 cup mozzarella cheese, shredded
1 head of cauliflower, cut into florets
¼ cup seasoned bread crumbs

Instructions:
Preheat oven to 400 degrees. In a large saucepan, melt butter over medium-high heat. Sauté onion in butter until softened, 3-5 minutes. Add the ham, cream, milk, cheese, salt and pepper and bring to a boil. Reduce heat to low and simmer until sauce is thickened, about 5 minutes. Add the cauliflower to milk mix and pour all into a greased casserole dish. Sprinkle bread crumbs over casserole and cover. Bake dish, covered, for 20 minutes. Uncover and bake an additional 15 minutes; until cauliflower is tender.  
*For a calorie-conscious dish, substitute milk in place of heavy cream.
