Southern Greens & Vinegar Sauce
Ingredients:
2 quarts water
1 lb. ham hocks
1 lb. greens, stems picked and well rinsed
1 cup apple cider vinegar
½ cup salt
2 T. pepper
Instructions:
In a large stockpot, bring the water and ham hocks to a boil over medium high heat; cook 15 minutes. Add the greens, vinegar, salt and pepper. Boil greens until tender; about 1 ½ hours, adding water if needed. While greens cook, prepare vinegar sauce.
Vinegar Sauce:
3 cups water
1 cup white vinegar
2 t. garlic salt
1 T. sugar
1 T. salt
4 T. Tabasco
Instructions:
Bring water, vinegar, garlic salt, sugar, salt, pepper and Tabasco sauce to a boil. Boil over medium heat until sauce thickens and reduces in half. Drizzle over greens.
