White Bean Super Bowl Chili
Ingredients:
2 cans navy beans, drained
2 cans chicken broth
4 slices bacon, cut into pieces
1 T. minced garlic
3/4 cup onion, diced
1 (4-ounce) can green chilies, drained
3 cups cooked, shredded chicken
1T. cumin
1 T. Italian seasoning
2 t. pepper
¼ t. chili powder
Instructions:
Place beans in a Dutch oven with broth and bring to a boil over high heat. In a large saucepan cook bacon over medium heat until crisp; reserve on a paper towel to drain. Add garlic, onion, and chilies to bacon grease and sauté until veggies are translucent. Add chile mixture to beans. Add chicken, cumin, Italian seasoning, pepper and chili powder. Lower heat to medium and cook, covered, for 30 minutes until soup thickens. Crumble cooked bacon pieces over top of each bowl.
