Mini Stuffed Potatoes
Ingredients:
12 small red potatoes
2 t. onion flakes
2 T. butter, melted
½ t. thyme
½ t. garlic salt
¼ cup sour cream
2 T. milk
½ cup cheddar cheese, shredded
1/3 cup real bacon pieces
¼ t. pepper
¼ t. paprika
Instructions:
Place potatoes in a large pot and cover with cold water. Bring to a boil, reduce heat and cook 15-20 minutes; until potatoes are tender. Drain potatoes. Cut in half; scoop out center of each potato half. Place potato filling into large bowl with remaining ingredients, except paprika. Mash all ingredients together until smooth. Place potato shells in a greased casserole dish and scoop the mashed potato mixture into each shell. Broil 5-7 minutes until browned on top and cheese is gooey. Sprinkle each with paprika before serving.
