Hot Potato Cakes

Ingredients:
6 cups chopped baking potatoes
3 cups Italian-style breadcrumbs
1 egg, beaten
½ cup shredded Cheddar cheese
½ cup finely diced cooked ham (or crumbled bacon)
½ cup onion, finely chopped
½ stick butter, melted
¼ cup sour cream
1 t. garlic salt
½ t. salt
½ t. pepper

Instructions:
In a large pot, cover potatoes with water. Bring to a boil; reduce heat and simmer until tender, 10-12 minutes. Drain well. In a large bowl, combine cooked potatoes, 2 ½ cups bread crumbs, egg, cheese, ham/bacon, onion, melted butter, sour cream, garlic salt, salt and pepper. Mash mixture into patties and dredge each in remaining ½ cup of breadcrumbs. In a large skillet, heat oil over medium heat. Add patties and fry 3-4 minutes per side until golden and crisp.
