Lucky Shamrock Cookies

Ingredients:
½ cup shortening
1 stick butter
2 cups sugar
3 eggs, beaten
¼ cup milk
1 t. vanilla
½ t. salt
5 cups flour
Small heart-shaped cookie cutters

For Green Icing*:
3 cups powdered sugar
½ stick butter, softened
4-6 T. milk
½ t. vanilla
10-12 drops green food coloring
Sprinkles for garnish

Instructions:
Preheat oven to 350 degrees.

In a large bowl, cream shortening, butter and sugar together. Beat in eggs, one at a time. Stir in milk, vanilla and salt. Slowly add flour; mixing until all ingredients are combined.

Turn cookie dough into a lightly floured surface. Roll out dough into 1/8 inch thickness. Cut dough with heart-shaped cookie cutter. Place one heart on a cookie sheet; place another heart on each side at a 90-degree angle, forming a shamrock. Gently press the heart cutouts together so they overlap. Roll a small amount of dough out, forming a 1-inch rope. Shape into a stem and place at the bottom of the shamrock; press together.

Bake 12-14 minutes until browned. Remove and allow to cool on a wire rack before icing.

To prepare icing: in a bowl, work the softened butter into the powdered sugar. Add milk a T. at a time until desired consistency is formed. Add vanilla and green food coloring drops until icing is an emerald green. After cookies have cooled completely, frost and top with sprinkles.
