Irish Bread
Ingredients:
3 C flour
1/4 C sugar
3 tsp. baking powder
1 t. baking soda
½ stick butter, softened
1 1/3 cups buttermilk
1 T. lemon zest
1 egg, beaten
1 egg, separated
1 C raisins
2 T. caraway seeds
Instructions:
Preheat oven to 400 degrees. In a large bowl, mix flour, sugar and baking powder and soda together. Cut in butter until mix resembles coarse crumbs. In another bowl, mix buttermilk, zest, beaten egg, separated egg white, raisins and caraway seeds. Add wet ingredients to dry and mix until combined. Pour into a greased skillet. Brush top with separated egg yolk to help the bread become golden. Bake for 40-45 minutes; until browned.
