Pork Oriental Stir-Fry

Ingredients:
2 T. sesame oil
1 lb. pork tenderloin, cut into 1-inch pieces
1 cup carrots, thinly sliced
1 (14-ounce) bag frozen broccoli florets, thawed
½ cup red bell pepper, chopped
½ cup onion, chopped
1 (15-ounce) can whole kernel corn, drained
1 (8-ounce) can water chestnuts, drained
1 cup chicken broth
2 T. corn starch
¼ - ½ cup soy sauce
1 t. ginger
½ t. pepper
Hot cooked rice or noodles for serving

Instructions:

In a large skillet, heat oil over medium-high heat. Add pork and cook 10 minutes, until lightly brown. Add broccoli, carrots, pepper and onion and continue to cook 5 minutes more. Add corn and water chestnuts. In a bowl, mix chicken broth, corn starch, ¼ cup Soy sauce, ginger and pepper. Pour this sauce over pork and veggies and bring stir-fry mixture to a boil. Reduce heat and simmer 4-5 minutes until sauce has thickened; adding more soy sauce if too thick. Serve stir-fry over hot cooked rice or noodles.
