Quick Veggie Tortellini Soup

Ingredients:
2 T. oil
½ lb. Italian sausage, casing removed and sliced
1 cup carrots, sliced
1 cup onion, diced
1 cup celery, diced
1 cup diced and peeled baking potato
½ cup green pepper, diced
1 (4-ounce) can sliced mushrooms, drained
1 T. minced garlic
4 cans chicken broth
1 (15-ounce) can tomato sauce
2 t. Italian seasoning
1 (20-ounce) package 3-cheese tortellini
Mozzarella cheese for garnish, saltine crackers for scooping

Instructions:
In a large pot, cook Italian sausage, carrots, onion, celery and green pepper in oil until veggies are translucent and sausage is browned and crisp; 5-6 minutes. Drain sausage and veggies. Add diced potato, minced garlic, mushrooms, chicken broth, tomato sauce and Italian seasoning. Bring to a boil, reduce heat and simmer 20-25 minutes. Add tortellini and simmer an additional 5-10 minutes; until pasta is tender. Serve with a sprinkle of mozzarella and crackers for scooping.
