Lemon Chess Bars
Ingredients:
1 box Lemon Cake Mix
3 eggs
2 sticks butter, softened
¼ cup fresh lemon juice
1 (8-ounce) package cream cheese, softened
1 (1 lb.) box powdered sugar
Instructions:
Preheat oven to 350 degrees. In a large bowl, combine cake mix, 1 egg and 1 stick of softened butter. Press this mixture into the bottom of a greased 9x13 casserole dish. In another bowl, beat softened cream cheese and butter together until smooth. Add lemon juice and 2 eggs. Slowly blend in the powdered sugar. Pour this liquid over the cake. Bake 45-50 minutes, until the sides turn golden. The top will still have a “gooey” look; allow to cool an hour before slicing into bars.
