Seafood Salad
Ingredients:
1 lb. imitation crab meat, shredded
1 cup diced celery
½ cup mayonnaise
¼ cup sliced green onions
1 T. lemon juice
2 hard boiled eggs, chopped
½ t. salt
¼ t. pepper.
2 T. olives, optional
Instructions:
Mix all ingredients. Refrigerate for at least 1 hour before serving. Serve either as a salad with crackers, stuffed in a fresh tomato or on split croissants.
