Sweet Pineapple Pork

Ingredients:
1 lb. pork tenderloin, cut into 8 crosswise pieces
½ t. salt
¼ t. pepper
2 T. butter, divided
1 cup bell pepper, chopped
½ cup fresh mushrooms, sliced
1 (8-ounce) can pineapple chunks, undrained
½  cup dry white wine, or chicken broth
2 t. ginger
1 T. jalapeño pepper, seeded & finely chopped
1/8 t. cinnamon
White fluffy rice for serving.


Instructions:
Sprinkle each pork tenderloin piece with salt and pepper; heat 1 T. butter in large skillet over medium heat. Add pork pieces; cook 3 to 4 minutes per side or until pork is tender. Place pork pieces on serving plate; keep warm. Add remaining 1 T. butter, bell pepper and mushrooms to same skillet; cook until pepper is crisp-tender. Reduce heat to low. Stir in pineapple and juice, wine, or chicken broth, ginger, jalapeño pepper and cinnamon; simmer until liquid is reduced to 1/4 cup. Serve pork over fluffy rice; spoon pineapple mixture over pork pieces.
