Mexican Beef Stir Fry

Ingredients:
1 lb. beef top round steak
2 T. vegetable oil
1 t. cumin
1 t. oregano
1 T. minced garlic
1 cup bell pepper, cut into thin strips
1 cup onion, cut into thin strips
1 jalapeño pepper, seeded and chopped fine
3 roma tomatoes, seeded and chopped
Rice, for serving

Instructions:
Cut beef top round steak into 1/8-inch thick strips. In a small bowl, combine oil, cumin, oregano and garlic; reserve half.
Heat half the seasoned oil in large pan over medium-high heat until hot. Add bell pepper, onion and jalapeño pepper; stir-fry until crisp-tender. Remove and reserve. In same pan stir-fry beef strips (half at a time) in reserved oil 1 to 2 minutes. Return cooked vegetables and roma tomatoes to pan and heat until tomatoes are hot. Serve over rice.
