Southern Greens
Ingredients:
2 quarts water
3 large pieces of ham hock
1 cup onions, diced
10 bunches (1 lb) greens, stems picked and well rinsed
1 cup apple cider vinegar
½ cup sugar
½ cup salt
¼ cup black pepper
Hot sauce, to taste
Instructions:
In a large pot bring the water and ham hock to a boil over medium heat and cook for 35-40 minutes. Add the greens, onions, vinegar, sugar, salt and pepper. Boil the greens until tender; about 1 ½ hours.
*Tip: as a saucy substitute you can use a half beer- half water mixture to cook the greens. To serve, ladle greens in a serving bowl, chop pieces off the ham hock and mix into greens. Sprinkle hot sauce to taste and serve with a slice of southern cornbread!
