Beef Tips and Onions
Ingredients:
2 T. butter
2 lbs. sirlon tips (beef stew meat)
½ t. salt
¼ t. pepper
2 cups onions, thinly sliced
1 cup fresh mushrooms, sliced
1 t. minced garlic
¼ cup flour
1 (10.5-ounce) can beef broth
1 T. Worchestershire sauce
1 t. liquid smoke
1 t. thyme
¼ cup half and half
2 cups prepared rice
Instructions:
In a large pot over medium-high heat, saute the sirlon in butter until cooked through. Remove from heat; set aside. Add onions, peppers and mushrooms to pot and cook over medium heat until tender and caramelized. Increase heat to medium-high and stir in garlic and flour; stirring constantly for 2 minutes to form roux. Add browned tips, broth, Worchestershire sauce, liquid smoke and thyme. Allow mix to simmer over low heat for 30 minutes, until thickened. Stir in half and half and simmer an additional 10 minutes. To serve, spoon beef tips over hot rice.
