Pear-Licious Bundt Cake

Ingredients:
3 eggs
1¼ cups vegetable oil
2 cups sugar
3 cups flour, divided
1 t. baking soda
1 t. salt
1 t. cinnamon
½ t. nutmeg
1 t. vanilla
3 cups chopped, peeled pears
1 cup pecans, chopped
1 cup flaked coconut
1 cup raisins, optional
1 cup powdered sugar

Instructions:
Preheat oven to 350 degrees. Grease a Bundt pan; set aside. In a large mixing bowl, beat eggs, oil, vanilla and sugar together until smooth. In another bowl, stir together 2 ¾ cup flour, baking soda, salt and cinnamon. Stir this gently into the wet ingredients until well incorporated. In another bowl, combine remaining ¼ cup flour with chopped pears, nuts, coconut and raisins. Fold this mixture into batter. Pour into Bundt pan and bake 60-70 minutes until a toothpick inserted comes out clean. Allow to cool 5 minutes before removing from pan. Sift powdered sugar over warm cake and slice.
