Southern Sweet Potato Pie
Ingredients:
4 large sweet potatoes
2 cups sugar
½ stick butter, melted
1 pinch cinnamon
1 pinch nutmeg
1 t. vanilla
2 eggs, beaten
1 cup evaporated milk
1 (9-inch) pie crust
Instructions:
Preheat oven to 375 degrees.
Cook the potatoes in the microwave 5-7 minutes each until tender.
Allow the potatoes to cool and then peel them.Put the potatoes in a large mixing bowl and
mash them with a potato masher. Add melted butter, sugar, cinnamon, nutmeg, vanilla, eggs and evaporated milk to potatoes; stir until all is incorporated.
Pour potato filling into crust and bake 40-45 minutes, until set. Let cool 30 minutes before slicing.
