White Chocolate Chunkies
Ingredients:
1 egg, beaten
½ cup light brown sugar
1 ¼ cups granulated sugar
pinch of salt
1/2 t. vanilla extract
6-ounces peanut butter, creamy or crunchy
½ stick butter, softened
½ cup dried cranberries
1 (4-ounce) bar of white chocolate, chopped
¼ cup coconut flakes
1 t. baking soda
2 cups quick-cooking oats
Instructions:
Preheat the oven to 350 degrees. In a large mixing bowl, combine the eggs and sugars. Mix well. Add the salt, vanilla, peanut butter, and butter; incorporate all. Fold in the chopped white chocolate, coconut, baking soda, and oats. Drop by tablespoons 2 inches apart on a greased cookie sheet. Bake for 8 to 10 minutes. Allow to cool on a wire rack before storing in a plastic container.
