Carmel Apple Bread

Ingredients:
2 large Granny Smith apples, peeled, cored and thinly diced
1 cup brown sugar
½ cup buttermilk
½ cup vegetable oil
4 eggs, beaten
3 cups flour
½ cup walnuts, chopped
2 t. baking soda
2 t. cinnamon
½ t. salt
1 t. nutmeg

For Carmel Glaze:
2 T. butter
¼ cup brown sugar
½ cup powdered sugar
1-2 T. milk

Instructions:
Preheat oven to 350 degrees. In a large bowl, stir together the apples, brown sugar, buttermilk, oil and eggs. Gently mix in the flour, baking soda, cinnamon, salt and nutmeg. Fold in the nuts and pour mix into 2 greased loaf pans. Bake 45-50 minutes; until a toothpick inserted in center comes out clean. Cool on a cooling rack completely before glazing. To prepare glaze: melt butter in a saucepan over medium heat, stir in brown sugar, stirring constantly until boiling. Stir in milk, remove from heat and allow to cool while bread is cooling; 30 minutes. Drizzle cooled glaze over bread loaves. Slice and serve, or wrap tightly and store in refrigerator.

Makes 2 loaves.
