Carrot Cake Muffins

Ingredients:
2 cups flour
¾ cup brown sugar
2 t. baking powder
1 t. baking soda
½ t. cinnamon
¼ t. pumpkin pie spice
¼ t. ginger
2/3 cup milk
1/3 cup vegetable oil
2 eggs, beaten
1 cup carrots, finely shredded
¼ cup raisins
¼ cup walnuts, chopped

Instructions:
Preheat oven to 400 degrees. In a medium bowl, combine flour, brown sugar, baking powder, baking soda and seasonings. In another bowl, combine milk, oil and eggs. Slowly add flour mix to wet ingredients. Stir in carrots, raisins and walnuts. Spoon batter 2/3 full into 12 greased muffin tins. Bake 20-22 minutes; until golden brown.
