Frosted Pumpkin Spice Bars
Ingredients:
2 cups flour
1 ½ cups sugar
2 t. baking powder
1 t. baking soda
2 t. pumpkin pie spice
¼ t. salt
½ cup vegtable oil
½ cup orange juice
1 cup canned pumpkin
2 eggs, beaten
Frosting
1/3 cup butter
2 cups powdered sugar
½ t. vanilla
2-3 T. milk
1/2 cup pecans, chopped
Instructions:
Preheat oven to 350 degrees. In a large bowl, mix dry ingredients together. In another bowl, mix eggs, pumpkin, juice and oil. Slowly beat wet ingredients into dry with an electric mixer, scraping the sides of the bowl. Pour mixture into a greased 9x13 dish and bake 23-25 minutes until a toothpick inserted in center comes out clean. Allow to cool completely before icing. To prepare icing: in a saucepan, heat butter over medium heat until melted. Remove from heat and gently stir in powdered sugar, vanilla and enough milk to make a spreadable constitancy. Spread frosting over cooled bars and sprinkle with chopped pecans, if desired. Cover and refrigerate until set; 30 minutes.
