Mango Salsa
Ingredients:
1½ cup chopped, peeled mangos
1 medium red bell pepper, finely chopped
¼ cup chopped red onion
1 jalapeno pepper, seeded and finely chopped
1 T. olive oil
½ t. lime zest
1 T. lime juice
1 T. vinegar
¼ t. salt
¼ t. pepper
Instructions:
In a medium bowl, mix fruit and veggies together. In another bowl, whisk oil, zest, juice, vinegar, salt and pepper. Pour liquid over fruit and veggies and toss to coat. Refrigerate until ready to serve with chips!
