Apple Crunch Slices
Ingredients:
2 large apples
1 t. lemon juice
1 c. creamy peanut butter
½ c. chopped nuts (walnuts, almonds, peanuts or pecans)
¼ c. raisins
¼ c. coconut, toasted
¼ c. chocolate bits (milk, semi-sweet or white)
Instructions:
To toast coconut: spread coconut evenly across a small skillet. Allow to brown over medium heat 3-5 minutes. Shake pan occasionally to allow for even browning. Remove after coconut is a caramel color.
Spread nuts, raisins, toasted coconut and chocolate on separate plates.
Core and slice each apple into 8 slices. Drizzle slices with lemon juice to prevent discoloration. Slather peanut butter over top and sides of each apple slice. Roll apple slice in desired topping; eat and enjoy!
