Bran Muffins

A Southern Family Favorite

Ingredients:
½ cup boiling water
½ cup All Bran original cereal
¼ cup butter, melted
¾ cup sugar
1 cup buttermilk
1 egg, beaten
1 ¼ cup flour
1 ¼ t. baking soda
¼ t. salt
1 extra cup All Bran original cereal

Instructions:
Preheat oven to 400 degrees.
Add ½ cup bran cereal to boiling water, cover and set aside. Cream butter and sugar; add egg. Pour in buttermilk and add scalded bran cereal to mix. Add flour, salt and soda to liquid mixture. Stir in remaining bran cereal. Bake for 18-20 minutes.

*This batter can be kept in the refrigerator for up to a month! Only bake the number of muffins needed and refrigerate remaining batter for future baking.
