Build-Your-Own Pizza Muffins
(These are suggested pizza toppings; have kids “build their own pizza” by filling small bowls full of meats and veggies to choose from.)
Ingredients:
2 English muffins, split in half
1 T. butter, softened
2 slices Canadian bacon, chopped
2 T. onion, finely chopped
12 pepperoni slices
4 slices mozzarella cheese
1 T. Italian seasoning
1 T. Parmesan cheese, grated
½ cup jarred pizza sauce*
Instructions:
Butter muffins and arrange on greased baking sheet. Toast under broiler until lightly toasted, 2-3 minutes. Preheat the oven to 350 degrees. Place a slice of mozzarella cheese and 3 pepperonis on each muffin. Sprinkle Canadian bacon, onion, 2 T. pizza sauce, Italian seasoning and grated Parmesan over each. Bake 12-15 minutes; until warmed through and crispy.
*Use spicy ranch pizza sauce recipe in place of jarred sauce for an extra kick!
