Crabby Cakes

Ingredients:
2 T. butter
¼ cup onion, chopped
¼ cup green bell pepper, chopped
2 T. pimento
½ T. garlic powder
1 t. Old Bay
¼ cup milk
1 T. Dijon mustard
½ cup saltine crackers, crushed
½ cup corn flakes cereal, crushed
1 egg, beaten
1 lb. claw crabmeat
¼ cup Parmesan
2 T. oil

Instructions:

Melt butter in skillet over medium heat. Sauté onion and bell pepper in butter until veggies are limp, about 5 minutes.

In a bowl, mix the pimento, milk, mustard, garlic powder and Old Bay together. Stir in the cooked veggies, ½ of the crushed crackers and cereal and the egg. Gently fold in the crabmeat. Form the mixture into 8 patties, about ½ inch thick.

Combine the remaining crushed crackers and cereal with the Parmesan in a shallow bowl. Pat each Crabby Cake into the cracker/Parmesan mixture and sauté in oil for about 3 minutes on each side, or until golden brown.
