Pan-Fried Fish Fillets

Ingredients:
3 lbs. fresh, cleaned white fish fillets
1 cup flour
1 cup yellow cornmeal
1 cup saltine crackers, crushed
1 t. garlic salt
½ t. pepper
½ t. Old Bay
¼ cup oil
½ stick butter
Lemon wedges

Instructions:

Wash the fish fillets in cold water and pat dry with a paper towel.

In a shallow bowl, mix together flour, cornmeal and crackers. Sprinkle fish with garlic salt, pepper and Old Bay then press the fillets flour mixture.

Melt butter and oil in skillet over medium-high heat. Sauté the fish until golden brown on one side then turn to brown the other side and cook through, about 3-5 minutes total. Serve with lemon wedges for squeezing over fish.
