Chicken & Artichoke Bake
Ingredients:
1 (24-ounce) jar marinated artichokes
4 cups cooked, diced chicken
1 cup chicken broth
1 (10 ¾ ounce) can cream of chicken soup
1 (10 ¾ ounce) can cream of celery soup
½ cup milk
1 cup mayonnaise
1 t. lemon juice
½ t. curry powder
1 ½ cups cheddar cheese
1 (4-ounce) can mushrooms, drained
2 cups cooked rice
¼ cup bread crumbs
2 T. melted butter
¼ cup Parmesan cheese
Instructions:
Preheat oven to 350 degrees.
Drain artichokes well. In a large bowl, combine artichokes, rice and chicken; stirring gently to combine. Spread this on bottom of 9x13 greased casserole dish.
In a bowl, combine chicken and celery soups, milk, mayo, lemon juice, broth, mushrooms and cheddar cheese. Layer this over the artichoke/chicken layer.
Combine melted butter with bread crumbs and Parmesan. Sprinkle this over top of casserole. Bake 30-35 minutes.
