Apricot Nut Bread
Ingredients:
6 T. butter, melted
1 egg
¼ cup buttermilk
¼ cup honey
1 t. vanilla
2 cups flour
¾ cup sugar
½ t. baking powder
½ t. baking soda
¼ cup walnuts, diced
¼ cup dried apricots, diced
2 T. raisins
Instructions:
Preheat the oven to 350 degrees. In a large bowl, combine butter, egg, buttermilk, honey and vanilla. In another bowl, mix together flour, sugar, baking powder and baking soda. Gently stir the dry ingredients into the wet; fold in the walnuts, apricots and raisins. Pour batter into a greased loaf pan and bake 55-60 minutes, until a toothpick inserted in center comes out clean. Cool for 5 minutes in the pan before inverting onto a cooling rack to cool.
