Artichoke Salsa
Ingredients:
1 (6.5-ounce) jar marinated artichokes, drained well and diced
¼ cup pitted olives, sliced
¼ cup red onion, diced
3 plum tomatoes, chopped
1 t. minced garlic
½ cup Parmesean cheese, grated
2 T. fresh basil, minced
Salt and pepper, to taste
Instructions:
Mix all ingredients together gently. To serve, spoon salsa into a bowl lined with bibb lettuce leaves. Surround with chips, crackers or toast points.
