Baked Rice Pudding

Ingredients:
3 eggs, beaten
1 ½  cups milk
½ cup sugar
1/4 tsp. salt
1 tsp. vanilla
1 tsp. cinnamon
1 cup cooked rice
1/2 c. seedless raisins, optional
¼ cup slivered almonds, for garnish

Instructions:
Preheat oven to 325 degrees. Combine all ingredients and pour into a greased 1 ½ - quart baking dish. Set casserole in a 2-quart baking dish on an oven rack. Pull oven rack out slightly and pour boiling water into the baking dish around the casserole to a 1-inch depth. Bake for 45 to 55 minutes; until knife inserted near center of pudding comes out clean. Serve as individual servings garnished with almonds in a martini glass.
