Beefy Taco Soup
Ingredients:
1 lb. pork sausage
1 lb. ground beef
1 envelope McCormick Taco seasoning
2 cups water
1 cup onion, chopped
2 (16-ounce) cans kidney beans, drained
1 (15-ounce) can pinto beans
1 (28-ounce) can fire roasted tomatoes, un-drained
1 cup chunky salsa
1 (4-ounce) can sliced, pitted olives
1 (14 ½ -ounce) can Rotel
1 (14 ½ -ounce) can Mexican-style diced tomatoes, un-drained
Fritos, sour cream, Mexican-style shredded cheese for garnish
Instructions:
In a large skillet, cook sausage and beef over medium-high heat until no longer pink; drain and add to slow cooker. Add taco seasoning, onion, water, beans, olives, salsa, Rotel and canned tomatoes. Cook on low for 4-5 hours; scoop over frito corn chips and a dollop of sour cream and sprinkling of Mexican-Style cheese.
