Blueberry Pancakes

Yield: 10-12 pancakes

1     cup all-purpose flour
2     tablespoons cornstarch
1-1/2     teaspoons baking powder
1/4     teaspoon salt
2     eggs
1     cup vanilla or plain soymilk
2     tablespoons vegetable oil
2     tablespoons honey
3/4     cup blueberries

Combine flour, cornstarch, baking powder and salt in a medium mixing bowl.  In a small bowl, whisk eggs, soymilk, oil and honey until thoroughly combined. Pour soymilk mixture over dry ingredients and whisk gently until barely combined - the batter should be slightly lumpy. Gently fold in blueberries. Cook on a hot, oiled griddle.
