Bruschetta Bites
Ingredients:
2 medium plum tomatoes, cut with seeds scraped
1 T. olive oil
2 large Basil leaves, chopped
1 t. minced garlic
1 t. lemon juice
½ t. salt
¼ t. pepper
Parmesean cheese
Saltine crackers
Instructions:
Gently scrape seeds out of tomatoes and place in a blender. Add chopped basil leaves, garlic, lemon juice, salt and pepper. Chop all ingredients together in the blender and slowly stream in olive oil to combine all. If mixture is too runny, pour through a strainer. Scoop mixture on top of each saltine cracker and garnish with a sprinkle of Parmesean cheese.
