Chilled Cantaloupe Soup Bowls
Ingredients:
1 medium cantaloupe, quartered & seeded
1 cup strawberries, sliced; plus additional for garnish
1 cup bananas, sliced
1 T. honey
¼ cup fresh orange juice
1 t. grated orange peel
Fresh mint, for garnish
Instructions:
Slice cantaloupe in half and remove fruit and seeds leaving a 1/8 inch rim. Slice the bottom of each cantaloupe half to create a flat “bowl” for serving. Place sliced fruit and remaining ingredients in a food processor or blender and blend until smooth. Put mixture in refrigerator to chill atleast 30 minutes prior to serving. Pour each soup serving into a cantaloupe half and garnish with a spring of mint and additional sliced strawberries.
