Coconut Chess Pie
Ingredients:
1 stick butter, softened
1 cup sugar
4 eggs
1/4 cup heavy cream
2 t. vanilla extract
2 t. vinegar
1 cup coconut
1 9-inch frozen pie shell
Cool whip, for serving
Instructions:
Preheat oven to 350 degrees. In a mixing bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, beating well after each addition. Beat in cream, vinegar and vanilla. Stir in coconut. Pour mixture into unbaked shell; bake at 350° for 45 minutes, or until set. Serve with a dollop of cool whip.
