Don't throw away those pumpkin seeds!
When carving your Halloween pumpkin, don’t throw away the seeds! Roasted pumpkin seeds have a nutty flavor and are packed with protein and fiber! They are yummy salted and toasted or flavored with sweet and savory spices.
To toast seeds: rinse seeds under cold water right after removing from the pumpkin (make sure you do this before the stringy pulp has a chance to dry). Place seeds on a single layer baking sheet and spray with cooking spray. Sprinkle with salt for savory or cinnamon and sugar for sweet and bake at 325 for 25 minutes, stirring half way through.
