Easy BBQ Chicken
Ingredients:
2 large boneless, skinless chicken breasts
1 cup onion, diced
1 cup bell pepper, diced
1 1/2 cups ketchup
¼ cup Dijon mustard
3 T. brown sugar
1 T.Worcestershire sauce
1 T. soy sauce
2 T. apple cider vinegar
1 t. cayenne
½ t. garlic powder
Salt & pepper, to taste
Instructions:
Combine all ingredients (except chicken & veggies) for the sauce in the slow cooker. Season the chicken breasts with salt and pepper and add chicken and veggies to the pot; coating well with the sauce. Cook on low 5-6 hours. Remove chicken from the slow cooker and shred it. Return to the sauce, mix and turn the cooker to high for an additional 30 minutes. Serve as a sandwich on rolls, over hot rice or mashed potatoes or as the stuffing to a “loaded” baked potato.
