Fresh Avacado Club Salad
Ingredients:
1 (10-ounce) bag fresh baby spinach
½ cup turkey lunch meat, shredded
½ cup ham lunch meat, shredded
4 green onions, sliced
2 slices bacon, cooked and crumbled
½ cup cherry tomatoes, halved
1 medium avacado, sliced
Cheddar cheese, shredded
For Dressing:
2 T. apple cider vinegar
2 T. olive oil
1 T. lemon juice
½ t. salt
¼ t. pepper
Instructions:
Wash spinach leaves and place in a large serving bowl. Sprinkle leaves with lunch meats, green onion, crumbled bacon, tomato, avacado slices and cheese. In a small bowl, whisk together dressing ingredients and drizzle over salad.
