Fruit Cockatil Cake

Ingredients:
2 cups flour
2 t. baking soda
1 ¼ cup sugar
2 eggs
½ cup vegetable oil
½ t. salt
1 (15.25-ounce) can fruit cockatil, undrained
½ cup sweetened coconut
½ cup walnuts, chopped

For brown-butter glaze:
¾ cup sugar
1 stick butter
½ cup evaporated milk
1 t. vanilla


Instructions:

Preheat oven to 350 degrees. In a large bowl, beat sugar, oil and eggs until fluffy. In another bowl, combine flour, baking soda and salt. Gradually add to sugar mixture. Gently fold in un-drained cocktail. Pour into a greased baking dish and sprinkle evenly with coconut and walnuts. Bake 40 to 45 minutes until a toothpick inserted in center comes out clean. Poke holes all over cake and drizzle brown-butter glaze over all. Serve warm with vanilla ice cream for an extra treat!
For brown-butter glaze: In a medium saucepan, combine sugar, butter and milk until butter melts and mixture begins to boil. Allow to boil 2 minutes, remove from heat and add vanilla.
