Peanut Fudge Nibbles

Ingredients:
½ stick butter, softened
¼ cup creamy peanut butter
1 (3-ounce) package cream cheese, softened
1 cup flour
4 ounces semi sweet chocolate
2 T. butter
1 egg, beaten
¼ cup sugar
1 t. vanilla
¼ cup peanuts, chopped

Ingredients:
Preheat oven to 325 degrees. Beat butter, peanut butter and cream cheese in a medium mixing bowl. Beat in flour just until mixture is crumbly. With hands, shape dough into a ball. Break off pieces of dough, forming a ball and press each into the bottom of a greased mini muffin cup. Prepare filling by heating chocolate with 2 T. butter over heat until melted and smooth; stirring continually. Remove from heat and allow to cool before adding egg, sugar and vanilla. Stir to combine all ingredients; scoop chocolate filling evenly into each muffin cup. Top each with a sprinkle of peanuts. Bake 25-30 minutes until chocolate filling is puffy. Cool nibbles on a wire rack.
