Raspberry Cheesecake Bars

Ingredients:
1 ¼ cups quick cooking oats
1/3 cup butter, melted
¼ cup sugar
1 (8-ounce) package cream cheese
¼ cup sugar
1 egg

For Glaze:
1 cup sugar
3 T. cornstarch
4 T. raspberry Jell-O
1 cup boiling water
1 pint fresh raspberries
Cool Whip, for serving

Instructions:
Preheat oven to 400 degrees. In a bowl, combine oats, butter and sugar. Press this onto the bottom of a greased 8-inch square pan. Bake 15 minutes. Mix cream cheese and sugar until fluffy. Blend in egg. Pour over oat crust and bake an additional 15 minutes until filling is set. Remove and cool 15 minutes before topping bottom and up the sides of the bars with raspberries. While bars cool, prepare glaze by combining sugar, cornstarch and boiling water together in a saucepan over medium-high heat. Cook until mixture has thickened to a glue-like constistancy, about 5 minutes. Remove from heat and stir in Jell-O. Whisk vigorously to remove any large clumps from glaze. Drizzle glaze evenly over cooled bars. Cover and refrigerate at least 2 hours prior to slicing and serving with a dollop of cool whip. *You can subsitute the fresh raspberries for fresh strawberries, blueberries, blackberries or peaches- just use the same flavor Jell-O of your chosen fruit topping.
