Saucy Chicken & Artichoke Linguini
Ingredients:
2 cups fresh mushrooms, sliced
1 (14 ½ -ounce) can diced tomatoes
1 (9-ounce) package frozen artichokes
1 can chicken broth
1 cup onion, chopped
1 (4-ounce) can sliced pitted, sliced olives
3 T. quick-cooking tapioca
3 t. curry powder
1 t. Italian seasoning
½ t. salt
½ t. pepper
2 lbs. boneless, skinless chicken breasts cut into 1-inch pieces
1 (16-ounce) box linguini noodles
½ cup Parmesan cheese
Instructions:
In a slow cooker combine the mushrooms, tomatoes, with juice, frozen artichokes, broth, onions, olives, tapioca, curry powder, Italian seasoning, salt and pepper. Stir in chicken. Cover; cook on low-heat 7-8 hours or on high-heat setting for 4-5 hours; according to manufactures’ instructions. Serve over hot linguini noodles, garnish with Parmesan cheese.
