Slow Cooked Pot Roast
Ingredients:
1 (2 ½ lb) boneless beef chuck pot roast
1 T. oil
2 baking potatoes, peeled and cubed
2 cups baby carrots, cut in half
1 cup celery, chopped
1 cup fresh mushrooms, sliced
2 cups onion, chopped
1 can beef broth
1 package onion soup mix
1 T. Worcestershire sauce
1 t. Italian seasoning
½ t. salt
½ t. pepper
Instructions:
Trim fat from roast. In a large skillet, brown meat on all sides in hot oil. Place potatoes, carrots, celery, onions, mushrooms in slow cooker. Place meat over veggies. In a small bowl, combine beef broth, onion soup mix, Worcestershire sauce, Italian seasoning, salt and pepper. Pour this over meat and veggies in cooker. Cover and cook on low-heat setting 10 to 12 hours; or according to manufactures’ instructions.
