Sugar and Spice Cookies
Ingredients:
2 ½ cups flour
½ t. baking soda
¼ t. salt
1 cup brown sugar
½ cup sugar
2 sticks butter, softened
2 eggs
2 t. vanilla
For Topping:
3 T. sugar
1 T. cinnamon
Instructions:
Preheat oven to 350 degrees. In a small bowl, combine sugar and cinnamon for topping; reserve. In a large bowl, beat sugars with butter until combined. Add eggs and vanilla, mix until light and fluffy. In another bowl, stir together the flour, soda and salt. Slowly add this mixture to the wet ingredients. Blend ingredients just until combined; do not overmix dough. Shape dough into 1-inch balls and roll each ball in the cinnamon/sugar topping. Place on a cookie sheet, 2 inches apart and bake 10-12 minutes until lightly browned. Immediately transfer cookies to a wire rack to cool.
