Vegetable Special
Ingredients:
1 lb. ground beef
3 medium potatoes, skinned and thinly sliced
3 medium carrots, skinned and sliced
1 (8.5 ounce) can green peas, drained-juices reserved
½ cup celery, chopped
1 onion, chopped
1 (8-ounce) can tomato puree
2 t. oil
1 t. salt
½ t. pepper
White bread slices, for serving
Instructions:
Preheat oven to 350 degrees. Arrange potatoes, carrots, peas, celery and onion in layers in a 2-quart greased casserole dish. Cook ground beef in oil until cooked through; drain and scatter on top of vegetables. Sprinkle salt and pepper over dish. In a small bowl, combine the liquid drained from the peas with the tomato puree. Pour this over the meat & vegetables. Bake for 1 hour or until vegetables are tender. To serve, place a slice of white bread on dinner plate and top with vegetable special. This will be a family favorite!
